"Philly will no longer be a 'bagel desert.'"
Chef Adam Willmer of Matyson fame is building the bake shop along with his wife, Cheri Fairall. Their aim is to go beyond just a good "everything" bagel and explore interesting new flavor combinations, both for bagels and the cream cheese that goes with them.
The owners had hoped to be open by now, but delays in shipment of the bagel oven (barely visible in the photo above) have pushed the projected Grand Opening into next month. Once open, Knead Bagels will serve breakfast and lunch daily from 6:30 a.m. to 3 p.m. and from 8 a.m. to 1 p.m. on weekends. And since a bagel wouldn't be complete without a good cuppa, Knead is using Elixr Coffee as its java bean source.
Gourmet bagel shops have had a rough go of it so far in this town, so we're hoping that local owners, distinctive flavors and high-quality ingredients will make the difference this time around, because we sure do knead a good bagel every now and then.
